Dog Days (Nights) of Summer

Wow is it hot.  Look what my car thermometer said on the way home:

That does not count the heat index either!  Because of the heat our dogs have been on a reverse schedule.  They stay outside all night and inside all day.  Gotta watch out for your pets when the heat is on like it is this week.

So I must confess that the heat makes me lazy.  When I got home from work I laid around and did nothing for about 2 hours.  I may have even taken a short nap.  I finally got my rear up and started making dinner at 8pm.  I decided to make chickpea tacos according to my meal plan even though it was kind of late.  The chickpea taco recipe is from Happy Herbivore.

This recipe came together very easily and very quickly.  I used a jar of chickpeas I had cooked from dry last weekend using the crockpot method.  Benzo mixed up some spices to make homemade taco seasoning.  I also cooked up a batch of brown rice using this method, which is the easiest way to cook brown rice.  Here is my finished plate:

We opened our very last jar of homemade salsa from last year.  I hope we have enough tomatoes to make more this year.

I didn’t feel like too many toppings tonight so I just kept it simple with the chickpea filling and some salsa.  Benzo had lettuce and rice in his tacos.

The best part about this recipe?  It did not make a giant mess in my kitchen.  I used very few dishes and was able to clean most of them up while the chickpeas were baking.  This is a huge plus for me.  Because if there’s one thing I don’t like about cooking, it’s the dishes.

Bottom line is that I give this recipe two thumbs up!  Quick to make, easy clean-up and great taste.  I don’t know if I like it better than lentil tacos, but it’s nice to have a different taco recipe every now and then.  Benzo thought these chickpeas would be great to keep on hand as a savory snack and I agree.

After dinner when Benzo let the dogs back outside a little green FROG jumped through the back door and into the kitchen!  Luckily we saw him and acted fast to capture him in a jar.  I shudder at the thought of what the cats would’ve done to him if we hadn’t gotten to him first.  Ultimate cat toy for sure.

Well despite my nap I’m tired so I think I’m going to wander into the kitchen to find some dessert and then go to bed.  Hope you’ve had a great day!
