Brilliant idea here. How many times have you wanted just one cupcake, but have not wanted to make an entire batch for fear of eating them all? Now you can make just one cupcake at a time! Even if you are not a vegan this is a great recipe and chances are you have all the ingredients in your kitchen right now. I just might make one tonight. 🙂
Spiced Pumpkin Yeast Bread! – The Domestic Vegan
Pumpkin bread in my bread maker? Yes please! This was a nice change of pace from the normal pumpkin quick bread. I made this last Friday morning and enjoyed it all weekend. It makes really good toast in the mornings.
Pecan Pie Truffles – Oh She Glows
This recipe caught my eye so quickly that I went right out and bought a bag of pecans the very next day. They seem so simple and I hope to whip them up this week.
Hmmm. These are all about food this time. What does that say? I think I’m starting to get ready for holiday baking and cooking.

I had such a lovely weekend and I was not ready for it to end last night. Benzo and I had an unplugged weekend away at a cabin at a nearby lake. It was so relaxing! I took Friday off work to get all our stuff packed and do a little baking (pumpkin bread above and a yummy apple granola bake). Then when Benzo got home we headed on out. We didn’t do much all weekend except cook, eat, read, nap and take walks. We also played several rounds of Skip-Bo (I won every game!) and I worked on my knitting project.
It was such a nice change of pace. We did everything a bit slower including cooking almost everything from scratch, washing all dishes by hand and trying not to use the microwave. Way different from the normal rush-rush-rush during the work week.
It was really nice to get away from everything and have a chance to recharge our batteries. We enjoyed our time there so much that we are already planning to go back before the end of the year!
