I love to eat oatmeal for breakfast and today I actually got my booty out of bed early enough to make it. Yea! And today I pretty much made dessert oatmeal: peanut butter and chocolate. Mmmm.
Peanut Butter Chocolate Oatmeal
Serves 1
1 cup water
1/2 cup old fashioned oats
1 tbsp ground flaxseed
Dash of salt
1 dollop of natural peanut butter
1 tbsp chocolate chips
On stovetop, bring water to a boil. Once boiling, add oats, flaxseed and salt. Reduce heat to medium or medium-low. Cover and simmer for 5 minutes.
Once oats are done, transfer to a bowl. Using the spoon you plan on eating with (to lower the quantity of dirty dishes), scoop out a dollop of peanut butter. The size of the dollop should be proportionate to your love of peanut butter. Plunge the spoon with peanut butter into the center of the hot oatmeal. Let this sit there for a few minutes while you do something else, like pour a cup of coffee, get your lunch together, clean the dinner dishes from last night that you neglected (I would NEVER do that 🙂 ).
After a bit the peanut butter should be nice and melty. Stir it into the oatmeal. Sprinkle chocolate chips on top, give them about 30 seconds to get melty, then swirl all the deliciousness together.
Oatmeal is such an awesome breakfast with all the whole grain oats. And the peanut butter adds an element of protein that helps to keep you full all the way till lunch. The chocolate satisfies my morning sweet craving.
My husband decided to forgo chocolate peanut butter oatmeal and made chocolate protein oatmeal instead. He stirred a scoop of chocolate protein powder into enough milk until it was smooth and then poured it over his oatmeal.
It looks like an oatmeal milkshake! (P.S. you could use any kind of “milk” you want, for those of us who are watching our animal-product intake.)
