Last week we added a new dinner to our routine – Greek-style pitas with homemade tzatziki sauce. I am not Greek so I can’t vouch for the authenticity of this dinner, but it was tasty and that’s all that really matters.
On the table we laid out:
Whole wheat pita pockets
Chopped cucumber
Chopped tomato
Sliced quinoa bites
Tzatziki sauce
On the side we had couscous sprinkled with fresh parsley.
Fill your pita with whatever you want. Top with tzatziki sauce. Devour!
This was such a light and refreshing dinner. We really enjoyed it and agreed it will be great this summer when produce is fresh and the nights are warmer.
Saturday after grocery shopping when it was time for lunch we pulled out all the leftovers and put together more delicious pita pockets. The quinoa bites were gone so we used chickpeas in some of the pitas and leftover couscous in others. All versions were delicious. I think you could also use plain cooked quinoa as well.
As a bonus my toddler loved the tzatziki sauce. He pretty much likes anything you can dip though. 🙂
