So I have to be honest. The time change has made me a little grumpy. I can’t figure out how one measly hour can throw me off so much! Yesterday I stayed in bed too long and then was running late pretty much all day. I was not in a good mood at all. Then I came home and my son was still napping (!) so I got right to work in the kitchen. It was sort of therapeutic and brought me out of the doldrums. Benzo and I made kale chips and homemade dilled hummus so look for posts on those two soon.
Anyway here’s an easy lunch we had over the weekend that I wanted to share. We had a smidge of homemade pizza sauce leftover from another dinner (about 1/4 to 1/3 of a cup) and I didn’t want it to go to waste. So I thought, why not pizza quesadillas?
Basically make a pizza on half a tortilla with sauce, cheese and whatever toppings you like. We used black olives (our son loves them).
Fold over and cook as desired. We fry ours in oil in a skillet. Not the healthiest but it sure is tasty and the outside is nice and crispy.
I was not expecting a lot out of this lunch but it turned out to be really, really delicious. A great lunch and a nice way to use up that little bit of extra sauce. We will definitely make these again and may reserve some sauce from our next homemade pizza on purpose just to make this lunch.
