Couscous

Couscous is super simple and quick to cook up.  It is literally ready in 6 minutes start to finish.  It makes a great side dish or it can be used as a “bed” underneath other goodies like roasted vegetables or stir-fry.  Couscous does come in a whole-grain variety, which is what I buy from the bulk bins at my local grocery store.  I always have some on hand in my pantry.

Six Minute Couscous
Serves 3-4

1 cup water
3/4 cup whole wheat couscous
Pinch of salt

In a small pan, bring the water and pinch of salt to a boil.

Remove from heat, dump in couscous, give it a quick stir and cover tightly with a lid.  Leave it alone for 5 minutes.  Do not open the lid.

After five minutes remove lid and fluff with a fork.  

Serve with a pile of roasted vegetables or alongside any main dish.  Make a couscous “salad” by adding various beans, nuts, vegetables and/or dried fruit to cooked couscous for a nutritious lunch.

Variations: use broth or juice instead of water or add fresh or dried herbs to the cooking water to add flavor.
