A mother’s responsibility involves scooping up your child to kiss his “bonked finger” as soon as you walk in the door before you even take off your coat or set down your bag. And that’s exactly what I did. And then we ate.
Benzo had whipped up a pan of spinach pesto lasagna based on the following recipe:
Spinach, Pesto & Cheese Lasagna @ The Simple Dollar
It was seriously the best lasagna I have ever had.
Recipe Notes:
- Cottage cheese instead of ricotta
- 4-6 cups fresh spinach, wilted in a skillet (fresh is best in my opinion)
- Shredded mozzarella instead of Fontina
- Prepared pesto from Costco
- Cheap red sauce in a can
I’ll say it again, this was the best lasagna I have ever had. The pesto really added a great flavor to the dish. Everything is better with pesto, right? The fresh spinach was smooth and almost creamy and I didn’t even notice the cheap canned red sauce.
We had this for three meals (dinner and two lunches) and will definitely make it again. Many times I’m sure.
