Meal Plan – June 20, 2010
I just got back from vacation and one of the first things I did was write a meal plan for the week. Benzo and I actually wrote it out on the back of the barf bag on our last plane ride home.
The two weeks before we left for vacation were completely crazy with not only getting ready for the trip, but also with home improvement projects and other extracurricular activities. Then we were gone for over a week, so it has been forever since I’ve done up a meal plan with some good home cookin’. I’m excited for the meals this week!
Sunday
Baltimorean Beans and brown rice (scroll down the linked page – it’s at the bottom)
Toasted bread
The Baltimorean Beans turned out FANTASTIC! Benzo and I both loved them. The flavors were so great – sweet corn with cider vinegar and the kale all went well together. We will definitely be making this again and I look forward to trying the other beans and rice varieties on that same post.
Monday
Pasta with red sauce from the freezer and sliced Field Roast
Green beans from the freezer (gotta eat them up because the new crop is coming in fast).
Tuesday
Marinated tempeh stir fry with broccoli and red bell pepper
Brown rice
Wednesday
Eating out with Do-Dad and OYB (older younger brother) to celebrate Father’s Day
Thursday
On your own! I have an extracurricular activity so we will both just eat whatever, whenever. Probably cereal, sandwiches, wraps or salad.
Friday
Grilled salmon burgers/veggie burgers
Grilled corn on the cob from the freezer
Tossed salad from the garden Instead of salad I cooked up the first zucchini from the garden.
Saturday
Homemade pizza
Tossed salad from the garden
Plans changed! We had artichoke and sun-dried tomato pasta instead.
