Meal Plan – August 8, 2010
The last few weeks I have been very lazy about meal planning. And last week I let a lot of fresh food spoil. I was really mad at myself so I made myself do a meal plan for this week in an effort to get back on track!
Sunday
Lettuce wraps with chile peanut noodles

Monday
Spicy grilled tempeh (recipe from Whole Foods)
Grilled corn on the cob and zucchini
Tuesday
Chickpea tacos (recipe from Happy Herbivore)
Brown rice
Wednesday
Tofu & vegetable stir-fry
Benzo will probably whip up some sort of tofu marinade (he rarely follows a recipe) and we’ll throw in whatever various vegetables we have on hand.
Thursday
Rigatoni Peperonata (recipe from Real Simple, see my blog about it here)
Salad & bread
Friday
Curried lentils (recipe from Go Dairy Free)
Brown rice
Naan - if I’m feeling ambitious
Saturday
We’ll either eat out or I could make Baltimorean Beans and Rice since we have most everything on hand (kale is in the garden)
